Pantry Challenge 2017

I have done a pantry challenge in the past and have been pretty successful at reducing my spending.  Good Cheap Eats is doing a pantry challenge this year and I’m following along!  It’s honestly possible because of the fact that we are eating in the dining hall 11 days out of this month 🙂 (plus, I have lots of food here!).  That helps so much!

This is my meal planning calendar (I’ll blog the details soon):


Here is all the food I have (ignore the messes…):

My pantry/cabinets of dry food






















(That brown stuff is chocolate… we made homemade chocolate and it dripped everywhere as we were freezing it… it is really hard to get off!).


I will make my own breakfasts.

I will make homemade bread.

We are set on meat for the month.

  • 1 pork shoulder (for carnitas)
  • 1 shoulder chuck roast
  • 1 package pork chops
  • 5lbs ground beef
  • 2lbs pacific whiting
  • 2 packages bacon
  • 4 packages Hormel natural lunch meat

Cold foods.

  • 1 1/2 gallons of milk
  • 2 lbs of butter
  • 1/2 lb hummus plus 8 snack packs
  • 1 bottle of ranch dip
  • 1 container Julios salsa
  • 3 dozen eggs (2 fresh and 1 boiled)
  • 1 loaf of whole wheat bread (fridge)
  • 4 loaves of sprouted bread (freezer)
  • 2 packages pitas (freezer)
  • 1 1/2 packages flour tortillas
  • 3 packages whole wheat flour tortillas (carb smart)
  • 1/2 large package corn tortillas
  • 1 package hot dog buns (fridge)
  • 2 packages hamburger buns (freezer)
  • 8oz mild cheddar, block
  • 8oz mild cheddar, shredded
  • 1 1/2 packages mild cheddar slices (Tillamook)
  • Lots of frozen veggies and fruit
  • Creamer/half and half


  • 1 cabbage
  • 1 large bag of carrots, plus carrots already cut up
  • 2 broccoli crowns, plus broccoli florets already cut up
  • 2 bell peppers already cut up
  • 4 avocados
  • 3 tomatoes
  • Celery
  • Spring mix
  • Golden potatoes
  • Russet potatoes
  • A few sweet potatoes
  • 1 acorn squash
  • 1 bag yellow onions
  • 1 bag of mandarin oranges
  • 2 bags of apples
  • 1 bunch of bananas
  • 2lbs strawberries
  • Red grapes (a little bit left)


  • HEB Kettle cooked chips (some in the snack cabinet, and a bag of 12 on top of our refrigerator)
  • HEB Organics Frogeez (about 6 bags)
  • HEB Organics animal cookies (a few bags)
  • Sea salt popcorn
  • Movie theatre butter popcorn
  • LOTS of Triscuits (I keep buying more thinking we are out because they were hidden in the cabinet!)
  • 1 bag of tortilla chips
  • Austin and Lance sandwich crackers

Other things that I have on hand (not everything… just some of the things that I can think of):

  • Whole wheat flour
  • Whole wheat sprouted flour
  • Baking soda, baking powder
  • Kodiak cakes pancake mix (used in other recipes as well)
  • Peanut butter (LOTS), raw honey, and jelly
  • Mac n cheese
  • Oats (steel cut, rolled, quick)
  • Grits (3 bags)
  • Coconut oil
  • Olive oil
  • Avocado oil
  • Coconut cooking oil
  • Quinoa
  • Brown rice
  • Pinto beans
  • Black beans
  • Polenta
  • Popcorn kernels
  • Coconut milk
  • Almond milk
  • Minced garlic
  • Canned garbanzo beans (4)
  • Canned pinto beans (2)
  • Canned black beans (2)
  • Canned kidney beans (1)
  • Protein powder
  • Powdered peanut butter
  • Rotel (3)
  • Petite diced tomatoes (3)
  • Tomato sauce (3)
  • Tomato paste (3)
  • Pizza sauce (1/2)
  • Coconut oil spray (1 1/2)

  • 3 taco seasoning packets
  • 2 onion soup mix seasoning packets
  • Different cereals
  • Homemade granola
  • Pop Tarts
  • Chia seeds, almond slivers, pumpkin seeds, shredded and flaked coconut (for granola)
  • Raw sugar
  • Brown sugar
  • Molasses
  • Maple syrup
  • Pyure
  • Lots of Lily’s chocolate chips (stevia sweetened)
  • Mexican vanilla
  • Plenty of condiments
  • Apple cider vinegar
  • Balsamic vinegar
  • Sriracha
  • Lots of dried herbs and seasonings
  • La Croix
  • Coke Zero
  • Coffee

The household items that we have:

  • Laundry detergent pods
  • Dishwasher detergent
  • Dish soap
  • Cleaners
  • Freezer bags, sandwich and snack bags
  • Foil, wax paper, parchment paper
  • All personal care items (shampoo, conditioner, kids wash, body wash, face wash, deodorant, makeup, razors, etc)
  • Plenty of toilet paper
  • Napkins

Gosh… typing all that out… I have lots of food here!  If I couldn’t make it last, there would be a problem!  What are some good recipes that you see out of the food I have on hand?  I’m out of ideas!
