Meal Planning Sundays, Week of July 2nd-8th

I haven’t posted a meal plan in a long time because we have been eating in the dining hall quite a bit, and frankly, I just haven’t been organized enough.

This coming week we are eating at home most days so I have come up with a meal plan!  I actually have meals in a list for the rest of the month, and most of them are out of a new cookbook that I got called Good Cheap Eats.  It’s a book with lots of simple recipes!  We have liked the ones we have tried so far!

Here’s my meal plan:


  • Steel cut protein oats (already made, in the fridge)
  • Whole wheat banana zucchini mini muffins
  • Green smoothie
  • Omelets and fruit
  • Homemade Greek yogurt and homemade granola (already made)
  • Spiced drop biscuits, eggs, bacon, and fruit (Saturday)


  • Sandwich, veggies, and fruit
  • Cottage cheese, boiled egg, veggies, fruit, and Triscuits
  • Deli meat, Tillamook cheese, veggies, fruit, and flaxseed and quinoa chips
  • Wrap, veggies, and fruit
  • Leftovers
  • Quesadillas and veggies
  • Summer sausage, veggies, fruit, and crackers (Friday)


  • Monday- Tostadas with homemade shells, homemade refried beans, and spicy sour cream
  • Tuesday- Dining hall (sausage, potatoes, corn, and salad)
  • Wednesday- 4th of July Potluck (bringing guacamole and chips)
  • Thursday- Egg and hash brown patties and fruit
  • Friday- Homemade pizza and veggies
  • Saturday- Pasta and homemade meat sauce with oven roasted green beans
  • Sunday- Mini meatloaves, mashed potatoes, and salad


  • Boiled eggs
  • Tillamook cheese
  • Homemade Greek yogurt
  • Apple sauce
  • Annie’s cheddar bunnies
  • Peanut butter crackers
  • Lara bars
  • Fruit and veggies
  • Nuts
  • Flaxseed and quinoa chips
  • Veggie straws
  • Kettle chips


  • Make muffins (for the zucchini muffins, I replace the pumpkin with 1 cup shredded zucchini and use cinnamon instead of pumpkin spice)
  • Veggie tray
  • Thaw beans
  • Thaw ground venison
  • Bake bread

I love having a plan!  I always have my calendar on my kitchen wall, but this is more detailed.  So I print this and put it on the cork board part of my calendar and refer to it through the week.  It’s so helpful!
