Meal Plan, September 9th through September 22nd

Last time I planned for two weeks and my second week ended being changed a lot so I know that might happen again.  It helps me, though, to have a plan in place anyway!  We follow it for the most part!

As always, I make a list of things to choose from for all meals except dinners (in which I plan specifically for each day).  Leftover nights are Wednesdays.  Friday nights are family movie nights so it’s something that can be eaten in the living room.  Robert works the weekend of the 21st-23rd so we’re eating in the dining hall (here at camp) or eating easy meals at home.

Breakfasts:

  • Pumpkin biscuits, page 99 and eggs
  • Oven omelet, page 23
  • Egg white oatmeal (known as Annie’s Oats in my Balance 365 program)
  • Green smoothies (with pumpkin, frozen banana, and spinach)

Lunches:

  • Green chile burritos, page 202
  • Quesadillas with bell peppers, mushrooms, beans, and cheese
  • Sandwiches (PB and honey or deli meat and cheese on 100% wheat bread), chips, and veggies
  • Tuna salad sandwiches (we keep it super simple with mayo and picked relish) and veggies and ranch
  • Salmon patties and veggies and ranch
  • Wrap with deli meat, cheese, and veggies and ranch or hummus with chips
  • Frozen pizza (weekend lunch) and veggies and ranch
  • Chicken nuggets, mac n cheese, and green beans (weekend lunch)

Dinners:

  • Sunday, September 9th- Easy Chili
  • Monday, September 10th- Chicken alfredo (jarred) with spinach salad with veggie mix (cucumbers, bell peppers, and mushrooms)
  • Tuesday, September 11th- Black bean tortilla casserole, page 27 with cilantro lime rice, page 292
  • Wednesday, September 12th- Leftovers
  • Thursday, September 13th- Dining hall
  • Friday, September 14th- Finger foods (with salami instead of summer sausage)
  • Saturday, September 15th- Homemade pasta sauce and protein pasta with steamed broccoli
  • Sunday, September 16th- Roast Chicken and Veggies, page 45
  • Monday, September 17th- Taco Joes, 68 with chips
  • Tuesday, September 18th- Chili stacks, page 17 with spanish rice
  • Wednesday, September 19th- Leftovers
  • Thursday, September 20th- Dining hall
  • Friday, September 21st- Frozen pizza
  • Saturday, September 22nd- Dining hall

Snacks (we don’t eat a lot of snacks anymore!):

  • White cheddar cheez-its
  • Graham crackers
  • Poptarts
  • Cereal
  • Veggies and fruit
  • Popcorn (Levi eats a whole bag almost every day after school!)
  • Chips and salsa

Desserts:

  • Peanut butter pie
  • Ice box pie with strawberries
  • Chocolate chip cookies

Prep for first week:

  • Veggie tray
  • Pies
  • Homemade pinto beans
  • Annie’s Oats
  • Oven omelet
  • Thaw meat
  • Veggie mix

Prep for second week:

  • Veggie tray
  • Veggies for a few meals
  • Veggie mix
  • Thaw meat
  • Pumpkin biscuits
