Meal Plan, December 17th through 30th

The next few weeks are going to be pretty busy.  I’m looking forward to it, but I’m also nervous about it.  I don’t do well with crazy.  So we’ll see how it goes.  I’m already ready for routine


This meal plan is pretty choppy because of being out of town and having some crazy days and nights.  I decided to buy groceries for 2 weeks because it would be hard to go to our “big town” next week.  So, my meal plan is for two weeks.


  • Poached (or fried) eggs on riced veggies, breakfast sausage, and toast with butter
  • Greek yogurt and homemade granola
  • Breakfast tacos (sausage, egg, and potato)
  • Oatmeal (I have some protein oatmeal), scrambled eggs
  • Omelet and toast with butter


  • Boiled eggs, lunch meat, veggies and hummus, fruit, and Triscuits
  • Natural chicken nuggets, veggies, and mac n cheese
  • Sandwich and veggies
  • Leftovers



  • Monday- Finger foods (with uncured salami instead of summer sausage)
  • Tuesday- Pan-seared pork chops, frozen veggies, and homemade bread
  • Wednesday- Homemade pizza (also making homemade empanadas for parties on Thursday at school)
  • Thursday- Carnitas and beans
  • Friday- Out of town
  • Saturday- Out of town
  • Sunday- Out of town


  • Monday (Christmas Eve)- Tamales, chili, and Happy Birthday Jesus cake (made by Karis)
  • Tuesday (Christmas)- Whole roasted chicken, roasted veggies (brussel sprouts, sweet potatoes, peppers, onions, russet potatoes), homemade bread, and homemade cookies
  • Wednesday- Brinner (bacon, eggs, fruit, and homemade biscuits)
  • Thursday- Finger foods
  • Friday- Out of town
  • Saturday- Out of town
  • Sunday- Out of town


  • Veggie tray
  • Thaw meat
  • Make beans in the instant pot
  • Make cookies on Saturday (the 15th)
