Meal Plan (for as long as we have these foods)

Meal Plan

Well y’all, we’re gonna be home for a long while.  I am taking advantage of the time at home and making lots of yummy foods.  I’m so thankful that we have plenty of food to make things work for a long time.  My friend here at camp is doing curbside orders on Sunday and is picking up for anyone who wants to place an order, so I’m doing that to get just a bit more.  I also have a few orders coming that I placed early last week.  One has snacks mostly (nutritious ones), and the other has toilet paper!  Woo hoo!

Anyway.

All that to say, I have had a whole lot of meal ideas in my head but I need to get them in print so that I don’t forget!

I’m just going to share a list for each meal time because we tend to want to just pick and choose things each day.  I also try to have some stuff prepped to just make sure I am ready to make things.  The meals will be repeated.

Any baked good will be making with freshly ground hard white wheat flour, gluten free/grain free flours of different types, or will be sourdough.

Breakfasts

  • Homemade pancakes, eggs, and fruit
  • Homemade biscuits and eggs
  • Homemade banana muffins and a smoothie
  • Instant pot oatmeal
  • Breakfast tacos
  • Breakfast cookies
  • Homemade Greek yogurt and granola

Lunches

  • Finger foods: uncured lunch meat, cheese, veggies, fruits, and popcorn or Triscuits
  • Sandwiches on sourdough, veggies and fruit
  • Quesadillas on homemade tortillas
  • Black beans, rice, avocado, tomato
  • Leftovers

Dinner

  • Homemade ramen x2 (once using chicken and once using grass fed beef bones)
  • Pork roast, roasted sweet potatoes, and salad
  • Grass fed beef ribs, broccoli, and baked potatoes x2
  • Chicken fried grass fed beef steak, potatoes, and…
  • Whole roasted chicken, riced veggies, and homemade bread x2
  • Southwestern salad: Lettuce and veggies, grilled chicken breast, black beans, corn, and homemade salsa
  • Greek salad with chicken and toppings
  • Pinto beans, rice, and toppings x2
  • Black beans, cilantro lime rice, and toppings x2
  • Finger foods x2
  • Grass fed beef burgers on homemade buns x2
  • Grass fed beef soft tacos (corn or flour) with toppings x2
  • Chicken tacos
  • Pork tenderloin and sides
  • Skillet chicken and rice x2
  • Whole wheat pasta and homemade sauce
  • Brinner x2
  • Sloppy Joes on homemade buns
  • Homemade pizza
  • Shepherd’s Pie

Y’all.  This is mostly meals with what we HAVE.  We will have to purchase a bit of produce and a few other things, but we are pretty stocked.  We may have to go without fresh fruits and veggies eventually, but we have a garden happening soon.

  • Homemade tortillas (with unbleached flour)
  • Homemade Kombucha

  • Homemade whole wheat crackers (when we’re out of Triscuits)
  • Homemade other things… cleaners, detergents, deodorant, etc

 

As a camp, we are making good stewardship a priority, and I’m excited to see how this plays out.  Composting, recycling, a community garden, etc.  I’m also excited that we have 11 chickens!  It’ll take a while till they lay eggs, but it’ll be here eventually.  They are a good long-term plan.

Lots of changes are happening with-in the camping world in general.  Our camp is having changes too, but they aren’t quite as drastic as some others (for now).  We are just trying to take advantage of extra time together and hope for the best!

Alright… I have been working on this post all day.  I’m going to bed! Ha!
